Ā Ever since we first started to offer Kanetsugu knives to our customers, back in 2006, we have received many positive comments about Kanetsugu’s knives. Our customers especially praise the sharpness, cutting performance and high standard of manufacturing. The secret behind these words of praise is, of course, Kanetsugu’s original convex edge geometry.

Ā Mr. Kawamura always makes an extra effort to explore new paths that might enable him to improve knife quality, or to better satisfy the needs and wishes of his worldwide customers.

Ā We are excited to reveal Kanetsugu’s new line of knives, which are the product of their vision and passion.

Ā This new Upgraded Version has a Classic Hammered Finish and aĀ San-MaiĀ (Three-layer) Blade, which is made with a VG-10 Cobalt Stainless Steel core that is sandwiched between soft, corrosion-resistant Stainless Steel. The San-Mai blade has been beautifully mirror polished to add elegance to the natural character of the Hammered Tsuchime Texture and give this Wa (Japanese-style) knife a more modern style.

Ā The Heptagonal (Seven-sided) Brown Pakka Wood Handle has a Black Pakka Wood Ferrule and excellent fit and finish. The stylish shape of theĀ WaĀ (Japanese-style) handle perfectly matches the Classic Hammered Finish of theĀ San-Mai blade.

Kanetsugu uses their own modern manufacturing technologies to create these practical Wa knives and high-quality handles, which are water-resistant, crack-resistant and easy to clean.

Ā We believe Kanetsugu have successfully captured the latest knife trends and met their worldwide customer’s needs and preferences by creating these new, finely-made, "Kanetsugu Classic Hammered Wa Series" knives.

These knives are made with all of Kanetsugu’s experience, craftsmanship and passion, we believe they will become one of the best value-for-money knives among our collection.

We have selected the versatile and essential combination ofĀ CHW-1 Wa Petty 150mm, CHW-2 Wa Santoku 175mm, and CHW-3 Wa Gyuto 210mmĀ for the Kanetsugu ā€œHeptagon! 3-Piece Knife Set.ā€

Wa Petty: A mainstay of professional Western kitchens, the Petty knife is a small general-purpose knife used for peeling, shaping, and slicing fruits and vegetables, chopping herbs, and making garnishes. The compact size and relatively narrow blade of the Petty knife mean that it is very nimble and controllable, thus it is ideal for making precise cuts.

Wa Santoku:Ā The tall blade and rounded nose / tip of the Santoku make it a versatile knife that is well suited to cutting meat, fish, or vegetables; Hence it’s name, which literally means ā€œThree-purposeā€. The Santoku is often recommended as a multi-purpose kitchen knife. Compared to a Western-style handle, the lightweight traditional Japanese handle of the Wa Santoku knife moves the balance point of the knife further towards the tip, which makes it feel more nimble and precise.Ā

Wa Gyuto:The lightweight, Wa Gyuto can be used with a variety of different cutting techniques to achieve a wide range of kitchen tasks and is suitable for cutting the vast majority of meats, fish, vegetables and fruits. The Wa Gyuto is true multi-purpose knife.
